Parmesan Crusted Cod
It is very important to cook this in a non-stick frying pan or the cheese will stick to the bottom of the pan. We served this great cod with some Fettuccine with Roasted Tomatoes

1 ½ pounds fresh cod fillets
1 cup freshly grated Parmesan (not powdered)
Salt and pepper to season
2 eggs + 2 tbsp water for egg wash
1 cup flour
Canola oil for frying

Wash cod and pat dry. Season fillets with salt and pepper. Dredge the cod fillets in the flour, then in the egg wash and finally in the grated parmesan.

Heat ¼ inch oil in a NON-STICK frying pan over medium to medium low heat. Fry fillets for about 3 minutes per side of until the crust is golden brown. I have also baked this on a silicone baking pad for about 20 minutes at 400 degrees F. You may have to turn the broiler for the last minute or so to brown the top of the cod. Serve.

The recipes I have scanned look divine...the photos are really great, making you want to run out and get ingredients and start cooking! I will be trying some of these for sure. Great Job!
