Happy Mother’s Day!

Spouse had to work on the day so I delivered this breakfast to her and a coworker early this morning. I don’t know that I can think of a more indulgent breakfast.

This truly is an indulgent version of French toast but it is still quick and easy enough to make at any weekend brunch. This is one recipe that will try impress your guests even though it is quite easy to prepare.

The recipe for the bananas in rum sauce here is exactly the same one that I use when serving it over good quality or homemade vanilla bean ice cream in the classic Bananas Foster dessert.

Bananas Foster French Toast - a completely indulgent version of French toast topped with a rum, caramel and banana sauce. Terrific for a celebration or Holiday brunch like Easter or Mothers Day.

Ingredients

For the French Toast

  • 8 slices of french bread, (or 16 slices if using a smaller baguette)
  • 4 eggs
  • ⅓ cup whipping cream or milk
  • pinch salt
  • 1 teaspoon of vanilla extract
  • 3 tbsp butter, (for frying)

For the Bananas Foster Sauce

  • 6 tbsp butter
  • 9 tbsp brown sugar
  • 2 tsp vanilla extract
  • ¼ cup rum
  • ½ tsp cinnamon
  • ¼ cup whipping cream
  • 4 sliced bananas

Instructions

To prepare the French Toast

  1. Whisk together the eggs, cream, salt and vanilla. Let the bread soak in this mixture for a few minutes to absorb as much as possible. 
  2. Fry in butter over medium-low high heat until golden brown. You don't want to fry these too quickly.
  3. To prepare the sauce and bananas
  4. In a saute pan combine the butter, brown sugar, vanilla, rum and cinnamon,
  5. Cook over medium heat until the mixture is well incorporated and begins to get quite foamy. At that point whisk in quickly whisk in the whipping cream.
  6. Immediately add the sliced bananas and cook for an additional minute just until the bananas are warmed through.
  7. Be very careful as this sauce is very hot. Allow it to cool for a few minutes before serving over the prepared French Toast

Nothing. It won't be Bananas Foster without it. You will however have a pretty good caramel.
