These crumble bars are a great recipe to help use up all those fall apples and one that my kids absolutely love. They really do taste like delicious little bites of a great apple crumble pie. 

These are yet another great choice fro Holiday baking because they are simple to make using simple ingredients and they freeze well too!

This recipe was inspired by this delicious Deep Dish Apple Crumble Pie that I have been making for years as well.

Ingredients
For the bottom layer
  • 1/2 cup butter
  • 1/4 cup granulated white sugar
  • 1 cups all-purpose flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • pinch salt
For the apple filling
  • 3 tbsp butter
  • 1/4 cup brown sugar
  • 4-5 large firm apples peeled and diced
  • 1 tsp cinnamon
  • 1/4 teaspoon nutmeg
For the Crumb Topping
  • 3/4 cup oats large
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon baking soda
  • pinch salt
  • 1/3 cup + 1 tbsp cold butter diced
Instructions
To prepare the bottom layer
  1. Grease a 9x9 baking pan or preferably line with parchment paper.
  2. Cream together the butter and sugar until well blended.
  3. Sift together the flour, cinnamon, nutmeg and salt.
  4. Blend into the butter mixture and press into the bottom of the prepared pan. Bake at 350 degrees f for about 12-15 minutes or until the bottom layer begins to brown at the edges. Cool on a wire rack for a few minutes.
To prepare the Apple Filling
  1. In a large non stick skillet melt together butter and sugar until foamy. Add the diced apples and spices and saute for about 10 minutes over medium high heat until the apples are softened and excess liquid has boiled off. Cool for a few minutes and spread out on the prepared base.
To prepare the Crumb Topping
  1. Mix together the oats, flour, brown sugar, cinnamon, baking soda and salt.
  2. Using your hands, rub the butter through the dry ingredients until crumbly. Scatter the crumble over the apple filling and press down slightly.
  3. Bake at 350 degrees f for about 25 minutes or until the crumble is golden brown. Cool completely on a wire rack before cutting and serving.

Going from a 9x9 to a 9x13, you'll need to male one and a half times any cookie bar recipe.
