When I think about dishes like this, my mother always comes to mind. She is a big fan of fresh crispy salads. She says she could eat them for ever meal of someone else makes them!

With a household of only two now for many years, it is difficult to keep a good variety of salad fixings on hand. That’s even more true in an age of big box stores, selling far too much for a 2 person home to consume before it goes bad.

Luckily this recipe uses a minimum number of ingredients to achieve a delicious balance of flavours and textures.

Strawberry Balsamic Salad with Grilled Lime Cumin Chicken and Walnuts

Inspiration from a family favourite restaurant.

Like me, she is also a big fan of dinner salads. Mrs. Marshall’s chef salad back in the 70’s and 80’s was a great example and probably my introduction to salads as a complete meal.

It was made her own roasted turkey, roast beef and ham added to a good variety of fresh salad greens and veggies. It was always so satisfying. I’d give anything to go there now and order one up.

Alas, Marshalls Restaurant, back in my home town of Bay Robert’s, is no more. Mrs. Marshall herself passed away just this past year too. Oh the number of meals she must have served in her time there.

Still, that impact of a great dinner salad stayed with me and our family is still enjoying them to this day.

My take on a fresh dinner salad.

Other inspiration for this recipe comes from the combination of balsamic vinegar and strawberries. This is an outstanding, very complimentary flavour combination!

A few years back there was even a craze of serving a reduction of very good balsamic vinegar with strawberries over ice cream! I never got caught up in that fad, but agreed that the flavour combination was delicious.

In this recipe I’ve added a little honey to balance the vinegar while keeping the fresh flavour of the strawberries intact. Together the strawberries, honey and balsamic vinegar form the dressing for this salad and it works very well.

This recipe would make my mom very happy too. With just a few simple ingredients, particularly in local strawberry season, this salad boasts plenty of flavour and texture, that’s sure to satisfy.

The strawberries get marinated in honey and balsamic vinegar which then serves as an oil free dressing for the entire salad. A few salty olives and crunchy walnuts added with perfectly grilled lime cumin grilled chicken add further layers of contrast in taste and texture. Perfect.

Balsamic Strawberry Salad with Grilled Lime Cumin Chicken and Walnuts - The marriage of healthy and delicious was never more harmonious than in this beautiful salad that is a complete meal for lunch or even dinner.

Ingredients

  • 2 cups strawberries
  • 6 tbsp balsamic vinegar
  • 2 tbsp honey
  • 1.5 lb chicken breasts
  • 1/4 cup lime juice
  • 3 tbsp olive oil
  • 2 tsp brown sugar
  • 1 tsp ground cumin
  • 1/2 tsp cinnamon
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp salt
  • 3 cups lettuce (or mixed salad greens)
  • 1/4 cup red onion
  • 1/4 cup red pepper
  • 1/4 cup kalamata olives
  • 2 tomatoes
  • 1/4 cup walnuts

Instructions

  1. Begin by tossing together the strawberries, vinegar and honey. Let stand for at least a half hour, tossing occasionally.
  2. Mix together all of the ingredients for the marinade and marinate 4 boneless chicken breasts in a sealed plastic bag for 1/2 hour.
  3. Grill the chicken until fully cooked. Rest the chicken for 5 minutes before slicing and serving on a bed of the mixed salad.
  4. Top with marinated honey balsamic strawberries and serve

Halved the recipe tonight for dinner...delicious marinade for both the chicken and strawberries...flavors are very fresh and complementary.
