I received a number of requests for this recipe that I had included in the menu posted yesterday. Here it is for those who asked and those who didn’t. I think it is a great accompaniment to roast chicken, grilled pork chops or glazed ham.

A quick and simple savory fruit and apple relish/compote to serve with roast pork, ham or even grilled chicken.
Ingredients
  • 1 cup chopped apricots
  • 2 large apples diced
  • ½ cup raisins
  • Zest and juice of 1 lemon
  • 1/3 cup apple cider vinegar
  • ¾ cup apple juice
  • 1 sliced red onion
  • ¼ cup brown sugar
  • pinch cinnamon
  • pinch freshly grated nutmeg
Instructions
  1. Boil all together gently for about 25 minutes until most of the liquid has been absorbed or reduced. Serve warm with glazed ham, grilled pork chops or roast chicken.
