When I was asked to give the Philips Airfryer a test run, one of the first things I thought about trying, was cod nuggets. Since school is truly back into a settled routine this week, it’s the time of year when meal planning and keeping the kids happy at the dinner table become priorities once again.

Our kids have always loved homemade fresh cod nuggets and we would often simply bread them in cracker crumbs or cornflake crumbs and fry them in vegetable oil in a cast iron pan, just like fried chicken.

They were always devoured with a little lemon honey tartar sauce on the side. I decided to give one of our kid’s faves a shot in the Philips Airfryer as a first test.

I liked the idea of the Philips airfryer using Rapid Air Technology to cook food from every direction because this would ensure that the crust on the cod nuggets would stay intact. Only a tablespoon of oil was used for 8 large nuggets which were probably twice the size of a standard chicken nugget.

For that low amount of fat, this certainly was a tasty, quick, healthy meal. The digital model that I have comes with the Double Layer Rack which I would recommend because I got 8 large cod nuggets in the airfryer with no crowding. I could have easily have fitted in few more, making it easy to feed up to 4 people.

Optional accessories.

The airfryer also has optional accessories for cooking skewered meat and vegetables as well as a fry grill pan and variety basket.  There’s even a small baking pan available which I think would be ideal for after school snack cakes, without the need for turning on the oven. It’s always good when your small appliances are energy saving as well.

After only 15 minutes in the Philips Airfryer, the cod nuggets came out perfectly cooked with a moist, flakey interior and a perfectly crispy crumb coating. They disappeared in record time. 

A couple of days later I tried the same recipe idea with slightly smaller pieces of boneless, skinless chicken breast using the added flavour suggestions in the recipe notes below and they were juicy and delicious too.

All in all I found the Philips Airfryer to be easy to use, very quick cooking and it produced excellent results with remarkable little added fat. I look forward to trying more recipes in the Airfryer including those that come in  the included full colour recipe booklet, which also includes tips for using the unit.

Crispy Cod Nuggets in The Philips Airfryer - simple tender chunks of codfish in a crispy cracker crumb crust; Cooks in only 15 minutes!

Ingredients

For the breaded cod

  • 1 1/2 pounds cod fillets cut in about 8 chunks
  • salt and pepper to season
  • 1/2 cup flour
  • 1 tbsp egg + 1 water
  • 1/2 cup cracker crumbs, or cornflake crumbs
  • 1 tablespoon vegetable oil

For the Lemon Honey Tartar Sauce

  • 1/2 cup low-fat or no-fat mayonnaise
  • 1 teaspoon honey
  • zest of half a lemon, finely minced
  • juice of half a lemon
  • 1/2 tsp Worcestershire sauce
  • 1 tbsp sweet pickle relish
  • pinch black pepper

Instructions

  1. In a food processor, crush crackers (or corn flakes) into fine crumbs, about a cup. Pulse the 1 tbsp of vegetable oil into the crumbs.
  2. Season the cod chunks with salt and pepper then dredge them in the flour.
  3. Next dip the flour dredged cod chunks into the egg wash and finally into the cracker crumbs. Press the crumbs onto all surfaces of the cod nuggets to get good coverage of the crumbs on all sides.
  4. Preheat the Philips Airfryer to 180 degrees C. Place half the cod nuggets in the basket plus use the rack to cook half on the upper level.
  5. Set the timer for 15 minutes. Remove from basket and serve with a garden salad or some Airfryer homemade french fries.

To prepare the Honey Lemon Tartar Sauce

  1. Simply blend all of the ingredients together well and let sit in the fridge for the flavours to combine until ready to serve.
  2. You can make this sauce day in advance too for best flavour.

Notes

To add extra flavour to the nuggets, consider adding, 1 tsp of many of the following to the flour dredge: dried dill, garlic powder or chilli powder.
