Noah’s Triple Chocolate Cookies

Inspired by some leftover chopped chocolate chunks, Noah wanted to make Double Chocolate Cookies. After discovering some leftover white chocolate chips in the cupboard he quickly ammended that thought to Triple Chocolate Cookies. How can a boy of 8 be blamed for upping the ante when a favourite cookie is involved. I think we might have overmeasured our flour in this particular batch as pictured because they are normally bake up flatter than this but they were delicious anyway and the baby man was pleased with his efforts.

1 cup flour
½ cup cocoa

½ teaspoon salt

½ teaspoon baking soda

½ cup butter

½ cup brown sugar

½ cup sugar

1 egg

1 teaspoon vanilla

6 oz semisweet chocolate chunks or chips

4oz white chocolate chunks or chips

Cream sugar, brown sugar, and butter very well. Add egg and vanilla and beat well.
Sift together flour, cocoa, salt and baking soda. Add to the creamed mixture and fold in until almost all the flour is incorporated. At this point add the chocolate and white chunks or chips.

Drop dough by teaspoons onto a parchment lined cookie sheet cookie sheet about 2 inches apart. Bake for 12-15 minutes at 350 degrees F. Cool for 5 minutes before removing cookies to a wire rack to cool completely.

These are really lovely. Made them and sent them to my hubbies work place with rave results. Nothing left on the plate but crumbs. My favorite way to bring home a plate! Thanks.
