These twice baked potatoes are a great example of how incredible side dishes can make an indulgent celebration meal all the more special.

One of the things that I have learned over the years of blogging at Rock Recipes is that folks really respond well to a great side dish recipe. Nobody can have too many great ideas for side dishes, they make a great meal even better.

I like to use Russet Potatoes for this recipe for extra creamy mashed potato stuffing.

A good example would be my recipe for Creamy Bacon Parmesan Potatoes which was also inspired by a great steak dinner. Thousands of people have tried that one and it is a real favourite on our website.

I love smoked cheeses in general and I must say that the smoked cheddar works wonderfully well in this recipe. Really though, any favourite cheese that you like that melts well can be used.

Similarly you can switch to a different complimentary herb like rosemary or tarragon if you prefer. One thing’s for sure though, you’ll never make these incredible potatoes just once!

Twice Baked Potatoes with Smoked Cheddar & Thyme

Twice Baked Potatoes with Smoked Cheddar & Thyme - baked potato stuffed with creamy mashed potatoes that have been infused with the flavours of roasted garlic, smoked cheddar and thyme. The perfect side dish for a decadent steak dinner.

Ingredients

  • 4 large russet potatoes
  • 4 cloves roasted garlic
  • salt and pepper to season
  • 1/4 cup melted butter
  • 1/4 cup heavy cream or whipping cream, heated
  • 3/4 cup grated smoked cheddar cheese
  • 1 tsp fresh chopped thyme, or 1/2 tsp dry thyme

Instructions

  1. Preheat oven too 375 degrees F.
  2. Wash the potatoes well and pierce them with a fork at several points on all sides.
  3. Place on the middle rack of the oven, unwrapped.
  4. Bake for abut 1 hour or until fork tender at the centre. Remove from the oven and allow the potatoes to cool for about 15 minutes.
  5. While you are baking the potatoes you can also roast the garlic. Take about 4 large cloves in the skins and place on a square of aluminum foil. drizzle with a little olive oil. Twist the edges of the foil together to seal the cloves in a little pouch. Bake along with the potatoes for 30-40 minutes or until the cloves are soft.
  6. Lay the potatoes flat on a baking sheet and cut the top 1/4 to 1/3 of the potato off horizontally with a sharp knife. Scrape the potato off the shin on the part you have cut off, into a mixing bowl.
  7. Using a spoon or a melon baller, Scoop out the inside of the potato into the mixing bowl, leaving about 1'2 inch of potato on all sides to form potato boats.
  8. Squeeze the garlic cloves from their skins into the potatoes and mash well.
  9. Season with salt and pepper, and add the melted butter and cream that has been heated for 15-20 seconds in the microwave. Mash until very creamy
  10. Fold in the grated cheese and chopped thyme, then spoon the mashed potato mixture back into potato boats.
  11. Drizzle the tops of the potatoes with a little extra melted butter and return to 425 degree F oven for 10 - 15 min until the tops brown slightly and serve.
