Cherry Marshmallow Balls

These Cherry Marshmallow Balls are often seen on bakery shelves around here, especially as we move closer to the Holidays. Although this recipe is readily available at several sources online, I thought I’d post my version because I’ve tweaked it just a little.

I found the original version a little too sweet and a little too unmanageable to form into balls.

I’ve tweaked the individual amounts of the ingredients to stretch the batch a little further and,  I think, to make them a little more manageable. One trick I use is to roll the balls twice.

Roll once in the coconut, when they are really sticky, and then once again when they are all rolled and sitting on the parchment paper lined tray.

I like to wash may hands and then roll the balls again to shape them better. I find that this works particularly well.

These no-bake Cherry Marshmallow Balls treats will be a big hit on your cookie platters at the Holidays and make a terrific choice for cookie exchanges with particularly little effort involved.

Dried Coconut

Fine or medium cut, desiccated (dried) coconut is what I use for this recipe but you can use sweetened coconut if that is what you have on hand.

Cherry Marshmallow Balls - easy, no-bake, delicious!

Prep Time: 20 minutes
Total Time: 20 minutes

Cherry Marshmallow Balls - an easy no bake recipe using just a few ingredients to make a quick treat whenever you like. Perfect for cookie exchanges!

Ingredients

  • one 10 ounce can sweetened condensed milk, (300 ml in Canada 14oz in the US)
  • 1 tsp pure vanilla extract
  • 2 cups graham cracker crumbs
  • 3 cups mini marshmallows
  • 1 cup chopped glacé cherries, or well drained maraschino cherries
  • cups approximately 2 coconut for rolling

Instructions

  1. In a large bowl stir the vanilla extract into the sweetened condensed milk.
  2. Fold in the graham crumbs.
  3. Add the cherries and marshmallows and fold those in gently.
  4. Line a cookie sheet with parchment paper or wax paper.
  5. Roll the mixture into about 1 1/2 inch balls and then roll the balls in the coconut. Place on the lined cookie sheet and continue until all the mixture is used.
  6. Wash your hands and then pick up each ball and re roll it. You can use more coconut if necessary but this step helps to form the cookies into more uniform balls.
  7. Refrigerate or freeze to store.

Made these today to go on my Christmas cookie plate. The recipe caught my eye because it seemed similar to something mom used to make when we were younger. The only difference was that she rolled hers into a log and cut it into slices. (We lost her a few years ago so I couldn't ask about the recipe) These were indeed sticky but I took the suggestion of Sarah and used a disposable glove. I scooped with the right and rolled with the gloved left hand....didn't end up with gummed up hands and it went rather quick. Now the true test - making sure I don't eat most of them before the holidays lol

I absolutely love your recipes. We own a small seniors home and I am always looking for new 'sweet treats' for our residents. I discovered that if I wear disposable gloves that the gooey mixes don't stick to them and it makes the job easier, cleaner and faster:0) Thankyou again .

Love these cookies. I know you like to experiment and thought you might like to try replacing the graham crumbs with Oreo chocolate baking crumbs. I increased the cherries by half a cup but just because I wanted to make sure I had the colour. Yummy.
