Chocolate Coconut Banana Pancakes

Shrove Tuesday, Mardi Gras, Fat Tuesday or Pancake Night…the last day before Ash Wednesday was traditionally a last gluttonous hoorah to get all the sugar and lard or butter out of the house before the self-denial days of Lent.

Well, there may still be plenty of sugar in the pantry these days but many here in Newfoundland still uphold the tradition of Pancake Night. As children we would eat as many as humanly possible to get at the previously boiled coins cooked into the centre of the pancakes.

It was quite the competition at our house to see who would make out with the most cash as we crowded the kitchen sink to greedily wash our pancake coated coins.

This particular recipe is my kids favourite pancake recipe. It’s too good to just have once a year so consider it for your next weekend brunch.

It’s a bit of a kitchen-sink type of recipe that throw some favourite ingredients in together to see what happens. What happens is usually delicious.

The base recipe is a very good one, so maybe you’ll ant to try your own everything but the kitchen sick version with a few of your own favourite additions. Let me know if you have any particularly tasty successes.

Ingredients
  • 2 cups flour
  • 4 tsp baking powder
  • ¼ tsp salt
  • ¼ cup sugar
  • 2 cups milk
  • ¼ cup sour cream
  • 2 eggs
  • 4 tbsp melted butter
  • 2 tsp vanilla extract
  • 1/2 cup unsweetened desiccated coconut
  • 2 small bananas diced
  • 1/2 cup chocolate chips
Instructions
  1. Sift together the flour, baking powder, sugar and salt.
  2. Add the milk, sour cream, eggs, melted butter and vanilla and whisk together until there are no lumps left.

  3. Stir in the bananas, coconut and chocolate chips.
  4. Pour by ¼ cup measures onto a heated and oiled griddle.
  5. When bubbles break the surface of the pancakes flip them and cook for another 2-3 minutes or until golden brown. Serve with maple syrup.
