Low Fat Turkey Italian Sausage Mixed Bean Soup.

With so many folks doing the post Christmas healthier eating thing, today Spouse made this very delicious low fat, healthy soup. It features the bold flavour of turkey Italian sausage and the heartiness of mixed beans.

The turkey sausage is what cuts the calories here by reducing the fat considerably. We often use homemade sausages in soup as well. They really do add great flavour and deep seasoning to the soup broth.

If you can’t find turkey sausage, any low fat sausage will do. You can even make your own Chorizo Sausage and try that for a spicier soup.

Bulk sausage meat can also be used in this Low Fat Turkey Italian Sausage Mixed Bean Soup recipe. In fact, I somewhat prefer using it, as I find it seasons the broth better.

When using sausage meat without the casings, I generally roll it into small meatballs and fry those off in a little canola oil before adding them to the recipe as indicated.

Keeping Low Fat Turkey Italian Sausage Mixed Bean Soup healthy

If you don’t want to use mixed beans in this recipe, then any beans you like can be used. Kidney beans alone would be fine, just be sure to rinse any canned beans before adding them to the soup.

In trying to keep this soup as healthy as possible, always use low sodium or sodium free chicken or turkey stock. I always say, it is you who should control the salt level in any dish.

Low Fat Turkey Italian Sausage Mixed Bean Soup

Low Fat Turkey Italian Sausage Mixed Bean Soup. A quick, healthy, flavourful and easy to make soup that's hearty enough to be a meal in itself.

Ingredients

  • 1/2 pound low fat turkey Italian sausage
  • 2 tbsp olive oil
  • 1 medium onion, diced small
  • 2 cloves garlic
  • 3 1/2 cups diced canned tomatoes
  • 4 cups turkey or chicken stock (low sodium)
  • 2 tbsp dried oregano
  • 2 bay leaves
  • 3 medium carrots, sliced
  • 2 cups canned mixed beans (rinsed)
  • 1 cup chopped bok choy
  • pinch salt and pepper to season

Instructions

    1. Grill or fry until fully cooked. Cut sausage into 1/2 inch slices and set aside.
    2. In a 4 quart or larger pot, saute together the olive oil, onion and garlic.
    3. When onions are softened, add the sliced sausage back to the pot along with all of the remaining ingredients.
    4. Simmer for about 20 minutes or until the carrots are fork tender. Serve immediately.
    5. Garnish with parsley and parmesan shavings if you like.

I made this for dinner tonight. YUM-MO!! I substituted fresh green beans for the bok choy and it was dee-lish!
