Mango Cookie Bars

Here’s an exotic twist on a crumble bar cookie with fragrant vanilla, mango and spices all in in a buttery crumble. Delicious. Unusually, it uses Chinese Five spice blend as the spice mixture. I’ve used Five spice with peaches and apples before with good results and this combination was particularly delicious as well.

This recipe can also be served warm with ice cream ad a simple but very tasty dessert.

Ingredients
For the crumble
  • 2 1/2 cups flour
  • cup cold butter cut into small pieces
  • 1/2 cup packed brown sugar
  • 1/2 tsp baking powder.
For the Mango Five Spice Filling
  • 2 cups chopped mango diced small
  • 3 tbsp brown sugar
  • 1 tbsp flour or corn starch
  • 1 tsp five spice powder
  • tsp vanilla extract
Instructions
  1. Pulse together all of the ingredients in the crumble in a food processor until crumbly or just rub together with your hands until crumbly.
  2. Press half of the crumble into the bottom of a well greased or parchment lined 9x9 inch baking pan and bake for 10 minutes at 350 degrees F.
  3. Toss together the vanilla extract and diced mango.
  4. Toss together the dry ingredients for the filling, then sprinkle over the fruit and toss well again.
  5. Spread evenly over the partially baked base.
  6. Top with the remaining crumble and press down slightly.
  7. Return the pan to the oven and bake for about 20-25 minutes or until the crumble top is evenly golden brown.
  8. Cool completely on a wire rack before cutting into bars or squares.
Recipe Notes

as a substitute for 5 spice powder using common spices try using 1 tsp cinnamon along with 1/2 tsp nutmeg, 1/4 tsp cloves and 1/4 tsp allspice.

Just like it sounds, five sppice is a mix of five spices. It should be available in any supermarket spice rack or in the Asian food section.
