The Penotti line of hazelnut spreads and cookie butters is going to be new to many readers but the Dutch company has been around since 1970. Depending on the ingredients used, the products are certified organic, GMO-free with no artificial colours & flavours or preservatives. The ingredients are also sustainably sourced, including some Fair Trade ingredients.

My absolute favourite was the Cookie Notti, a cookie butter made from Belgian Speculoos Cookies. It was caramel-y flavoured with a texture much like peanut butter. I was hooked. I found myself sneaking a spoonful and eating it straight from the spoon each night after dinner. My 17 year old son loved it as much as I did.

For this recipe I set out to use the Penotti Cookies and Milk variety in a sandwich cookie but truthfully any of your Penotti favourites will work. I like how a little barrier of chocolate hides the yummy, creamy surprise inside.

Ingredients
For the vanilla wafter cookies
  • 2 cups flour
  • 1 tsp baking powder
  • 2/3 cup sugar
  • 1 Tbsp vanilla extract
  • 1/2 cup melted butter
  • 4 egg yolks
For the chocolate perimeter
  • 1/2 cup semi sweet or dark chocolate chips
  • 2 tbsp whipping cream
You will also need
  • 1 jar of Penotti Cookies & Milk spread
Instructions
To make the vanilla wafer cookies
  1. Sift together the flour and baking powder and set aside.
  2. Whisk together the sugar, melted butter and vanilla extract until well combined.
  3. Whisk in the egg yolks.
  4. Fold in the sited dry ingredients until a soft dough forms.
  5. Chill the dough for 15-20 minutes.
  6. Roll the dough out onto a lightly floured surface to about a quarter inch thickness or a little thicker.
  7. Cut the cookies out with a large 3 inch cookie cutter.
  8. Bake on a parchment paper lined cookie sheet for about 15 minutes or until the bottom edges begin to turn golden brown.
  9. Remove from pan and completely cool the cookies on a wire rack.
To prepare the chocolate
  1. In a small bowl or measuring cup,heat the whipping cream for just a few seconds in the microwave.
  2. Add the chocolate chips and stir.
  3. Return to the microwave oven for 5 to 10 second intervals, stirring after each one.
  4. Continue only until the chocolate is melted and smooth. Be careful not to overheat the chocolate.
  5. Add the melted chocolate to a piping bag with a wide writing tip or to a ziplock bag with the corner snipped off.
To put the cookies together
  1. Turn half of the cookies over and using the piping bag or ziploc bag, pipe a perimeter of chocolate around the outside off the upturned cookies.

  2. Add a heaping tablespoon of the Milk & Cookies Spread into the centre of each upturned cookie.
  3. Lay the other cookies on top and press down on each one until the chocolate comes right out to the edges of the cookies.
  4. Let stand at room temperature for at least an hour or two to let the chocolate set.
  5. Store in an airtight container.

I live in Vancouver but I'm from Nova Scotia. I eat mostly organic and shop at organic stores but have never seen this product. I'm going on their websit and getting myself some of their products
