I do love a colourful, flavourful dinner salad and this one was totally outstanding. The chicken breasts get added flavour from being dry rubbed with smokey spices.

They then get slowly open roasted on a rack in the oven, which makes this a great recipe for fall and winter. Wouldn’t this be a welcome reminder of summer during a snowstorm?!

In summer the chicken can be cooked under indirect low heat on a backyard gas or charcoal grill. A smoker box with hardwood chips can give it extra smoky flavour if using the grill too.

The oven method still provides delicious juicy chicken chunks to enjoy with the spinach and other vegetables. Of course, the sweet grilled pineapple and tangy pomegranate seeds add flavour pops too.

A simple homemade lemon dijon dressing is another delicious element. It beautifully completed this balanced, nutritious, colourful, flavourful and oh so satisfying dinner salad.

NOTE: I like to debone my own chicken breasts so that I can roast the bones and skins for stock later. I freeze them until I have enough to cover a baking sheet then use the instructions in my post on making Chicken Stock here.

Smoked Chicken Spinach Grilled Pineapple Pomegranate Salad - as flavourful as it is healthy.

Ingredients

  • 4 large boneless skinless chicken breasts

For the Dry Rub

  • 1 tbsp smoked paprika
  • 1/4 tsp chipotle powder
  • 1 tbsp powdered ginger
  • 1 tbsp dry mustard
  • 1/2 tsp dry thyme
  • 1/2 tsp black pepper
  • 1 1/2 tsp garlic powder
  • 1 tsp salt
  • 1 tbsp brown sugar
  • 1 tsp chili powder

For the salad

  • about 6 cups baby spinach or mixed baby greens
  • 1/2 cup sliced radishes
  • 1 cup julienne sweet bell peppers
  • 1/2 sliced English cucumber
  • seeds of half a pomegranate
  • 1 1/2 cups lightly grilled diced golden pineapple

For the Lemon Dijon Salad Dressing

  • 1/3 olive oil
  • 1 tsp finely minced lemon zest
  • juice of one lemon
  • 3 tbsp dijon mustard
  • pinch of salt
  • pinch of pepper
  • 1 1/2 tbsp honey

Instructions

  1. Wash the chicken breasts and pat dry with paper towels.
  2. Sprinkle the dry rub on both sides of the chicken breasts.
  3. If you don't use all of the rub just save it in an airtight container for next time. Don't save any dry rub that comes into contact with the chicken though. Use a spoon to sprinkle on the rub so that you do not cross contaminate it.
  4. At this point you can grill the chicken or place the chicken breasts on a rack in a roasting pan and roast at only 275 degree F for about an hour depending on the size of the chicken breasts.
  5. Always use a meat thermometer inserted into the middle of the thickest part of the chicken breast reaches 170 degrees F or 77 degrees Celsius.
  6. Let he chicken rest for 10 minutes before dicing and adding to the salad.

For the Lemon Dijon Dressing

  1. Simply shake together all of the ingredients in the dressing in an airtight container like a mason jar until well combined.
