The Best Chocolate Chip Cookies

Soft and chewy with crispy edges and the perfect amount of rich chocolate morsels. I’ve never had better anywhere. 

I have tried dozens of recipes over the years and this one is the best. Both crispy and chewy, this one satisfies all lovers of this cookie classic.

14/04/2012 Update: When I first posted this recipe in the early days of this blog, I still baked chocolate chip cookies on a regular basis.

These days my 14 year old daughter, Olivia has taken over the job for the most part.

My 12 year old son Noah can turn out a mean batch of cookies all on his own too.

Actually I’ll confess that he actually made the batch in this updated photo. I even used it in my first cookbook!

Both kids are turning into very adept bakers and can both turn out perfect chocolate chip cookies from this outstanding recipe.

Dark Chocolate Chips, to melt and dip the biscotti

I like to use 50% dark chocolate chips for this recipe but you can use semisweet or milk chocolate if you prefer.

2020 Update. The chocolate chip cookie baking duties are still very much mostly out of my hands. My son Noah is the expert these days, and since he is now studying photography at university, he gets the credit for both baking and taking the photo of this latest batch.

It was high time for an updated photo of this recipe and I think it came out quite well.

The Best Chocolate Chip Cookies

The Best Chocolate Chip Cookies. NEW VIDEO! After many years of recipes and experiments, this is the the final result of tweaking what I I think is the perfect chocolate chip cookie.

Ingredients

  • 1 1/3 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter
  • 1 egg
  • 1 tsp vanilla extract or butterscotch flavoring, or both! Hint, hint.
  • 1 cup semisweet or dark chocolate chips

Instructions

  1. Preheat oven to 350 degrees F. Lightly spray one cookie sheet with spray oil or line with parchment paper.
  2. In a medium sized bowl whisk together flour, salt, and baking soda.
  3. In a large bowl, cream together the butter and sugars until light and fluffy. Add the egg and vanilla and combine thoroughly.
  4. Add the flour mixture to the creamed mixture. Mix only enough to incorporate flour. Do not over mix. Fold in the chocolate chips.
  5. Form cookies by dropping a rounded teaspoon of dough on the prepared cookie sheet two inches apart.
  6. Bake until light brown around the edges, about 12-15 minutes, depending on cookie size.
  7. Over baking is the biggest problem with most chocolate chip cookies.
  8. Your oven temperature and the type of cookie sheet you use will vary the baking times considerably. When they are golden brown around the edges is the time to remove them from the oven. Thinking they are a little underdone is probably a good thing. Experiment by baking only a couple of cookies at a time to see what the perfect baking time is for your oven
  9. Cool for 10 minutes on the baking sheet before removing to a wire rack to cool thoroughly.

These cookies are wonderful! Already made them three times. My only advise is keep watching them after the 9 minutes mark as they might burn of you wait till 15 mins. In my oven, it takes 9 mins to bakes them nicely.

I have been making these cookies ever since I bought your first book. Best cookies ever. Recently due to diet restrictions I had to make some adjustments. I make them with bob's 1:1 gluten free flour and crystal margarine(lactose free) and they are still amazing. I am so glad it worked so I can continue to enjoy these cookies.
