Penotti Surprise Cookies - beautifully flavoured, buttery vanilla wafer cookies sandwiched together with Penotti Cookies and Milk spread for a delicious surprise inside.

Ingredients
For the vanilla wafter cookies
2cupsflour
1tspbaking powder
2/3cupsugar
1Tbspvanilla extract
1/2cupmelted butter
4egg yolks
For the chocolate perimeter
1/2cupsemi sweet or dark chocolate chips
2tbspwhipping cream
You will also need
1jar of Penotti Cookies & Milk spread
Instructions
To make the vanilla wafer cookies
Sift together the flour and baking powder and set aside.
Whisk together the sugar, melted butter and vanilla extract until well combined.
Whisk in the egg yolks.
Fold in the sited dry ingredients until a soft dough forms.
Chill the dough for 15-20 minutes.
Roll the dough out onto a lightly floured surface to about a quarter inch thickness or a little thicker.
Cut the cookies out with a large 3 inch cookie cutter.
Bake on a parchment paper lined cookie sheet for about 15 minutes or until the bottom edges begin to turn golden brown.
Remove from pan and completely cool the cookies on a wire rack.
To prepare the chocolate
In a small bowl or measuring cup,heat the whipping cream for just a few seconds in the microwave.
Add the chocolate chips and stir.
Return to the microwave oven for 5 to 10 second intervals, stirring after each one.
Continue only until the chocolate is melted and smooth. Be careful not to overheat the chocolate.
Add the melted chocolate to a piping bag with a wide writing tip or to a ziplock bag with the corner snipped off.
To put the cookies together
Turn half of the cookies over and using the piping bag or ziploc bag, pipe a perimeter of chocolate around the outside off the upturned cookies.
Add a heaping tablespoon of the Milk & Cookies Spread into the centre of each upturned cookie.
Lay the other cookies on top and press down on each one until the chocolate comes right out to the edges of the cookies.
Let stand at room temperature for at least an hour or two to let the chocolate set.
