Ingredients
4ouncesix salmon portionsabout an inch thick
For the vegetable mixture toss together:
1small red pepperjulienned
1small yellow pepperjulienned
2clovesminced garlic
2tbspfinely grated fresh ginger
½tsptoasted sesame oil
juice of one lime
finely grated zest of ½ lime
2tbsplight soy sauce
½tspwhite pepper
½tspground cumin
3tbspfresh chopped chives
Instructions
Place each of the salmon portions on a square of parchment paper. Top with the vegetable mixture.
Bring two sides of the paper together and roll the paper together to about an inch above the peppers and salmon. Roll up the two open ends of the paper and tuck underneath the salmon.
Place the salmon parcels an inch or two apart on a baking sheet and bake at 375 degrees F for about 20 minutes depending upon the thickness of the salmon. Let rest for 5 minutes before serving.
