Ingredients

  • 1 pound large shrimp peeled and de-veined
  • 3 cloves minced garlic
  • 3 tbsp olive oil
  • Salt and pepper to season
  • ½ cup small diced red pepper or roasted red pepper
  • ¼ cup white wine (seafood vegetable or chicken stock can be substituted)
  • 3 tsp crushed chilli paste (optional or to taste; 1 tsp chili flakes can also be substituted)
  • 3 tbsp chopped fresh basil or Italian parsley
  • 1 ½ cups whipping cream

Instructions

  1. Lightly sauté the garlic in the olive oil over medium heat.
  2. Add the shrimp, season with salt and pepper and sauté for only about 3 minutes.
  3. Remove the shrimp from the pan and add the white wine.
  4. Reduce the white wine to about half before adding the chilli paste, red pepper and cream.
  5. Simmer the sauce for a couple of minutes until the cream begins to thicken slightly.
  6. Add the shrimp back to the pan along with the chopped herbs and simmer only for an additional minute or so before serving over your favorite pasta, couscous or rice.

Recipe Notes

If you are not a fan of spicy food, you can easily omit the chili paste and substitute a tablespoon or so of Dijon mustard to the sauce instead for an equally good dish without the kick.
