Raspberry Brie Panini

You might call this raspberry brie panini a posh grilled cheese but it's a versatile idea that I've even cut into hors d'ouevre size for cocktail parties.

Ingredients

  • 2 slices Belgian or French bread
  • 1 tsp butter
  • 2 ounces brie cheese
  • 1/4 cup raspberries
  • 1 tsp honey
  • toasted chopped hazelnuts (optional

Instructions

  1. Lightly butter two pieces of bread. Flip the bread over as the buttered side will become the outside of the sandwich.
  2. Place slices of brie on one piece of bread, top with a sprinkle of raspberries (and chopped nuts if you are using them) and a drizzle of honey. Top with the second slice of bread, butter side out.

  3. Place the sandwich on a preheated panini press and cook for just a few minutes or until crispy and golden brown on the outside. 
  4. Allow to sit for about 5 minutes before cutting and serving.
