Ingredients
2tbspolive oil
1medium onion, finely diced
3clovesgarlic, chopped
3large carrots, diced
2 1/2cupsdiced canned tomatoes
6cupslow sodium vegetable stock
1cupgreen lentils, rinsed
2 1/2cupscanned chickpeas, rinsed
4bay leaves
1tbspdried oregano(or 2 tbsp fresh oregano)
1tspdry thyme(or 2 tsp fresh thyme)
salt and pepper to season
Instructions
Heat the oil in the bottom of a large dutch oven over medium heat. Add the onions, garlic and carrots.
Saute for just a few minutes until the onions soften but do not brown.
Add all of the remaining ingredients and simmer slowly for 20 minutes or so until the lentils are tender and fully cooked.
