Ingredients

  • 2 tbsp olive oil
  • 1 medium onion , finely diced
  • 3 cloves garlic , chopped
  • 3 large carrots , diced
  • 2 1/2 cups diced canned tomatoes
  • 6 cups low sodium vegetable stock
  • 1 cup green lentils , rinsed
  • 2 1/2 cups canned chickpeas , rinsed
  • 4 bay leaves
  • 1 tbsp dried oregano (or 2 tbsp fresh oregano)
  • 1 tsp dry thyme (or 2 tsp fresh thyme)
  • salt and pepper to season

Instructions

  1. Heat the oil in the bottom of a large dutch oven over medium heat. Add the onions, garlic and carrots.
  2. Saute for just a few minutes until the onions soften but do not brown.

  3. Add all of the remaining ingredients and simmer slowly for 20 minutes or so until the lentils are tender and fully cooked.
