Ingredients

  • 8 cups coarsely ground bread crumbs

Instructions

  1. Use bread that is about 3 days old but not completely stale. You can use a box grater or a food processor or to make coarse bread crumbs from bread slices.

  2. Preheat oven to 250 degrees and spread the coarse crumbs out evenly on a baking sheet.
  3. Bake for 30 minutes and then toss the crumbs before returning them to the oven for another 30 minutes or more.
  4. The length of time in the oven varies between bread types and their moisture content. Some may need up to 90 minutes. Just be sure the crumbs are very dry and crumble easily when squeezed between your fingers.
  5. Let the crumbs cool off for about 20 minutes, then return them to the food processor and grind them to as fine a consistency as you require. Some people like to grind smaller  portions as they need them for specific recipes.

  6. In any case, store your dried bread crumbs in an airtight container and they will last for several weeks.
