Fantastically flavourful spicy burgers with oozing pockets of cheese and topped with plenty of bacon.

Ingredients
For each burger you will need:
6ouncesregular or lean ground beef
1 1/2ouncesMonterrey jack or pepper jack cheesecut in 1 cm cubes
pinchkosher salt
1/8tspblack pepper
1/2tspchipotle powder
1cloveroasted garlicmashed into a paste (or 1/2 clove finely minced garlic)
2tbsphot sauce or 1 tbsp minced fresh jalapeno pepperoptional
Top with:
oil packedsundried tomatoes
crisp cooked smoky bacon
baby lettuce leaves
Instructions
Combine all the burger ingredients.
Form into patties and cook in a hot, lightly oiled cast iron pan or on a preheated grill until well done (internal temperature with a meat thermometer should read 160 degrees F or higher.
Serve on toasted crusty rolls with crisp cooked bacon, lettuce and tomato. I pve chopped sindried tomatoes on this flavourful burger.
Recipe Notes
The total cooking time reflects the time it takes to roast the garlic. While it's roasting you can prep all your ingredients and cook the bacon.
