Ingredients
2cupsquartered strawberries
6tbspbalsamic vinegar
2tbsphoney
For the chicken marinade
Juice of 2 limes
3tbspolive oil
2tspbrown sugar
1tspground cumin
1/2tspcinnamon
1/2tspfreshly ground black pepper
1/2tspsalt
For the salad
mixed salad greens
red onion
red pepper
sundried kalamata olives
tomato wedges
toasted walnuts
Instructions
Begin by tossing together the strawberries, vinegar and honey. Let stand for at least a half hour, tossing occasionally.
Mix together all of the ingredients for the marinade and marinate 4 boneless chicken breasts in a sealed plastic bag for 1/2 hour.
Grill the chicken until fully cooked. Rest the chicken for 5 minutes before slicing and serving on a bed of the mixed salad.
Top with marinated honey balsamic strawberries and serve
