Banana Date Spice Muffins. It's very quick and easy to whip up a batch of these tasty muffins and yet another great way to use up those speckled ripe bananas that always seem to be sitting on the counter top.

Ingredients

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp ground cloves
  • 1/2 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 2 eggs
  • 1/2 cup canola oil
  • 3/4 cup brown sugar
  • 2 medium size over ripe bananas mashed
  • 1/2 cup chopped dates

Instructions

  1. Preheat oven to 350 degrees F.
  2. Sift together the flour, baking powder, baking soda, cloves cinnamon and nutmeg. Set aside.
  3. Beat together the eggs, oil and brown sugar until foamy.
  4. Stir in the mashed bananas and chopped dates.
  5. Finally, fold in the dry ingredients just until the flour is incorporated. Do not over mix.
  6. Spoon the batter into well greased or paper lined muffin tins and bake for 15-20 minutes or until a toothpick inserted int he centre comes out clean.
  7. Cool on a wire rack. Makes about a dozen muffins.
