Ingredients
For the vinaigrette
3tbspfreshly squeezed lemon juice
1/2tspfinely minced lemon zest
2tbspextra virgin olive oil
pinch salt and pepper to season
1tbsphoney
1teaspoonchopped fresh thymeor other fresh herbs
For the salad
4cupsRomaine lettuce (chopped)
1cupdiced cucumber
2fresh peachescut in wedges
3slicescrisp cooked smoked baconchopped
Instructions
Whisk together all of the ingredients for the vinaigrette or shake together well in a covered mason jar.
Pour over the assembled salad ingredients, toss and serve immediately.
