Fudge Brownies

Fudge Brownies - this recipe for the best, ultimately fudgey brownies starts with a boiled fudge base to ensure dense, chocolatey delicious brownies every time.

Ingredients

  • 1/4 cup melted butter
  • 3/4 cup milk
  • 1 1/2 cups brown sugar
  • 2/3 cup corn syrup
  • 2 cups dark chocolate chips 50% cocoa
  • 1 3/4 cups all purpose flour
  • 1/2 cup cocoa
  • 1/2 tsp salt
  • 1/8 tsp baking soda
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 cup of additional chocolate chips to stir into batter

Instructions

  1. In a medium saucepan, bring the melted butter, milk, brown sugar and corn syrup to a gentle boil for 4 minutes.
  2. Remove from heat and stir in the 2 cups of chocolate chips until smooth. Transfer the chocolate fudge mixture to a glass or plastic bowl to cool down for about a half hour until it reaches near room temperature. Stir it occasionally.
  3. Lightly grease a 9x13 pan and line with parchment paper. Preheat oven to 375 degrees F.
  4. Sift together the flour, cocoa, salt and baking soda and set aside.
  5. Add the eggs and oil to the cooled chocolate fudge mixture and whisk to combine well.
  6. Fold in the dry ingredients until the flour is well incorporated but do not over mix the batter.
  7. Fold in the 1 cup of chocolate chips and pour the batter into the prepared pan.
  8. Bake at 375 degrees F for 40 minutes.
  9. Let the brownies cool completely in the pan before cutting into squares or bars. Store brownies in an airtight plastic container.

Recipe Notes

There is some leeway in the baking temperature and time for these brownies. I had a lot of people sample the test batches that I made and some of them actually preferred them a little underbaked, where in my opinion, they were actually more like fudge, especially at the centre of the pan. That version was also best refrigerated and served cold in my opinion. If you want to try experimenting I'd say reduce the heat to 350 degrees F and bake for 35 minutes. Over time you will find the best time and temperature to suit your particular oven and your particular taste, I would however, recommend making them according to the recipe as written if you are making them for the first time.
