Dijon Cole Slaw - our standard recipe with cabbage and carrots or try adding sweetness with the addition of golden raisins and bell peppers.

Ingredients
For the Dijon Coleslaw Dressing
3/4cupplain mayonnaise
1tbspapple cider vinegar
2tbspwhole grain Dijon mustard
2tbsphoney
For the coleslaw
4cupsshredded cabbage
1large grated carrot
2insmall bell peppers (redorange or yellow) cut thin slices (optional)
1/2cupgolden raisinsoptional
Instructions
Whisk all of the ingredients for the coleslaw dressing together and set aside.
Chop and shred all of the coleslaw ingredients as required. Cover with plastic wrap and chill until ready to serve.
Toss the coleslaw with the dressing just prior to serving.
Recipe Notes
The mayonnaise we use in this dressing nowadays is almost always a reduced fat version. When making the bell pepper and raisin version of this coleslaw I omit the grated carrot most time but it's perfectly fine to add it too if you want.
