Mango Cookie Bars - an exotic twist on a crumble cookie bar with a filling flavoured with five spice mix for an unusually delicious and fragrant combination.

Ingredients
For the crumble
2 1/2cupsflour
1 cupcold buttercut into small pieces
1/2cuppacked brown sugar
1/2tspbaking powder.
For the Mango Five Spice Filling
2cupschopped mangodiced small
3tbspbrown sugar
1tbspflouror corn starch
1tspfive spice powder
2 tspvanilla extract
Instructions
Pulse together all of the ingredients in the crumble in a food processor until crumbly or just rub together with your hands until crumbly.
Press half of the crumble into the bottom of a well greased or parchment lined 9x9 inch baking pan and bake for 10 minutes at 350 degrees F.
Toss together the vanilla extract and diced mango.
Toss together the dry ingredients for the filling, then sprinkle over the fruit and toss well again.
Spread evenly over the partially baked base.
Top with the remaining crumble and press down slightly.
Return the pan to the oven and bake for about 20-25 minutes or until the crumble top is evenly golden brown.
Cool completely on a wire rack before cutting into bars or squares.
Recipe Notes
as a substitute for 5 spice powder using common spices try using 1 tsp cinnamon along with 1/2 tsp nutmeg, 1/4 tsp cloves and 1/4 tsp allspice.
