Ingredients
3cupssweet potatoes thinly sliced
3tbsppeanut oil
salt and peeper to season
For the Orange Sauce
1/2cuporange juice
finely grated zest of one orange
3tbspsoy sauce
1tspvery finely grated ginger root
1tbsphoney
1/4tspcinnamon
Additionaly you will need
2/3cuptoasted walnuts
Instructions
Stir fry the sweet potato slices and peanut oil in a large wok for about 5 minutes over medium high heat.
Season with salt and pepper.
Reduce heat to minimum-low and cover for one minute before adding the sauce mixture.
Mix together all of the ingredients in the orange sauce.
Add sauce to the sweet potatoes and bring to a simmer.
Simmer and toss for an extra few minutes to let the sauce thicken a little.
Serve with the toasted walnuts on top
