  • 1/2 cup salted butter
  • 1/2 cup sugar
  • 1 1/2 tsp vanilla extract
  • yolk of one large egg
  • 1 1/4 cups flour
  • 1/2 cup toffee candy chips I use Skor brand

For the Chocolate Ganache Filling

  • 8 ounces semisweet chocolate chips
  • 1/3 cup scalded whipping cream
  • 1 tablespoon honey

  1. Cream together the butter and sugar until light and fluffy.
  2. Add the vanilla extract and egg yolk. Beat until smooth.
  3. Fold in the flour and toffee chips until a soft dough forms.
  4. Form into 1 inch balls and place on a parchment lined baking sheet. Make a dent in each ball with your thumb or the handle of a wooden spoon.
  5. Bake at 350 degrees F for about 20-25 minutes or until lightly golden brown. You may have to take them out of the oven in the last few minutes and repress the centers with a wooden spoon to maintain the centers deep enough to fill with the chocolate.
  6. Cool completely on a wire rack before spooning chocolate ganache into the center of the cookies.

To prepare the Chocolate Ganache Filling

  1. Pour the scalded cream over the chocolate chips in a warm bowl.
  2. Let stand for 5 minutes before stirring in the honey until smooth.
  3. Spoon into the center of the cookies and allow to cool completely.
