crumbled blue cheese
at room temperature.

To a small saucepan add the olive oil and shallots.

Sauté the shallots in the olive oil until softened and fully cooked.

Add the white wine and simmer until the wine is half reduced in volume, then add

the sour cream, salt and pepper

Bring to a slow simmer before adding the blue cheese.

Stir in the blue cheese, cover the pot and remove it from the heat. Let stand for 5 minutes before giving it a final stir and serving.
