Ingredients

  • 1/2 cup sugar
  • 1/2 cup butter
  • 1/2 cup dark molasses
  • 1/4 cup cold water
  • 2 1/2 cups flour
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 2 tsp powdered ginger
  • 1/2 tsp cloves
  • 1/2 tsp allspice

Instructions

  1. Cream the butter and sugar well. Blend in molasses and water.
  2. Sift together remaining ingredients and blend together until dough forms.
  3. Chill 2 to 3 hours.
  4. Form the dough into two 3 inch wide logs and place 6 inches apart on a parchment lined cookie sheet.
  5. Bake for about 30 minutes at 350 degrees F.
  6. Remove the biscotti from the oven and let cool for about 5 minutes before cutting the biscotti on a diagonal into ¾ of an inch thick slices.
  7. Place the biscotti back on the parchment lined cookie sheet and reduce the temperature to 300 degrees F.
  8. Bake for an additional 15 minutes before turning the cookies over and baking for an additional 10 minutes. Cool completely.
  9. Melt 12 ounces of dark chocolate chips in a double boiler.
  10. Dip one side of the biscotti into the chocolate and let stand until the chocolate cools and hardens.
