Roasted Lime Cumin Pork Tenderloin - a simple marinade infuses the lime and cumin flavour into the pork tenderloin before roasting. Delicious served with this easy to male Mango Lime Salsa too.

Ingredients
1 ½ to 2lbwhole pork tenderloin
For the Marinade
¼cupolive oil
Zest of one lime finely chopped
Juice of one lime
1tspground cumin
1tspsea salt
1tspcoarse ground black pepper
1cloveminced garlic
Instructions
Marinate the pork tenderloin in a Ziploc bag for about an hour.
Open roast in a 375 degree F oven for 30-40 minutes depending on the size of the tenderloin. Use a meat thermometer to be sure it reaches an internal temperature of 160 degrees F.
Let the meat rest for 10-15 minutes before slicing into medallions with a very sharp knife. and serving with the Mango Lime Salsa.
