Parmesan Herb Crackers

Ingredients

  • ¾ cup flour
  • ½ cup grated parmesan cheese
  • ½ tsp salt
  • ¼ cup very cold butter cut in small pieces
  • 2 tbsp chopped herbs Savoury and oregano are great
  • 1 tsp coarsely ground black pepper
  • 2-4 tbsp ice cold water

Instructions

  1. Pulse all ingredients together in a food processor until mixture resembles a coarse meal. Add only enough water to bring the dough together, pulsing the processor every time additional water is added. Form dough into a roll about 1 ½ to 2 inches in diameter, wrap in plastic wrap and chill for a hour or so or overnight.
  2. Cut crackers from the roll with a sharp knife about ¼ inch thick and place on a parchment lined baking sheet. Bake at 375 degrees F for 10 minutes, flip the crackers over and bake for an additional 5-10 minutes until golden brown.
  3. Tip: Make a double batch and keep the plastic wrapped dough in the freezer for next time.
  4. Fantastic with soups.
