Ingredients
3tbspextra virgin olive oil
3cloveschopped garlic
1small red onion finely diced
3cupscornbread cut in small cubes and toasted
3cupsFrench bread cut in small cubes and toasted
1tspground sage
1tspground thyme
½tspground black pepper
½cuptoasted slivered almonds
¾cupgolden raisins
¼cupmelted butter
1cupchicken stock
Instructions
Toast bread cubes on a cookie sheet in a 350 degree F oven for about 10-15 minutes. Toss a couple of times during the baking tome to ensure even browning.
Sauté garlic and onions in olive oil to soften them and add to remaining ingredients. Toss together well and use as a stuffing for chicken or a loin roast of pork.
You can also cook this stuffing in a covered casserole at 300 degrees F for about ½ hour.
