Chocolate shortbread cookies infused with orange flavour and sandwiched together with a sweet orange buttercream frosting.

Ingredients
For the Chocolate Orange Shortbread Cookies
2cupsflour
1 1/2cupscocoa
1 1/2cupscold butter
1 1/4cupssugar
2tspvanilla extract
zest of 3 oranges finely grated and minced
For the Orange Buttercream Filling
1/2cupbutter
2cupsicing sugarpowdered sugar
1tspvanilla extract
1tbspminced orange zest
3or 4 tablespoons milk
Instructions
To make the Chocolate Orange Shortbread Cookies
Sift together the flour and cocoa. Set aside.
Cream together the butter, sugar, vanilla extract and orange zest.
Add the dry ingredients to the creamed mixture to form a dough.
Chill for about an hour, then roll out the dough to about a quarter inch thick.
Cut individual cookies out with a 2 inch cookie cutter and bake at 350 degrees F for 12-13 minutes. Cool completely on a wire rack.
To make the Orange Buttercream Filling
Beat all the ingredients together until smooth using only enough milk to bring the frosting to a workable consistency. It should be stiffer than frosting for a cake.
Spoon a teaspoon or so between two of the shortbread cookies and squeeze together to form the sandwich cookie.
Recipe Notes
Add an additional hour to total time to allow for the cookie dough to chill.
