Ingredients

  • 3 bananas medium to large size, and quite ripe
  • 2 cups flour
  • 1/4 tsp salt omit if using salted butter like I do
  • 1 tsp baking soda
  • 3/4 cup sugar
  • 1/2 cup butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup chocolate chips any kind, but I always prefer darker chocolate

Instructions

  1. Preheat oven to 350 degrees F.

  2. Sift together the flour, baking soda and salt. Set aside.
  3. Mash the bananas with a fork until they are smooth. Small lumps are okay.
  4. Cream the butter and sugar until light in colour and fluffy.
  5. Beat in the vanilla extract.
  6. Add the eggs, one at a time, beating well after each addition.
  7. Mix in the mashed bananas.

  8. Fold in the flour mixture by hand using a wooden spoon or rubber spatula.
  9. When the flour mixture is almost incorporated, with a few streaks of flour in the batter, add the chocolate chips in the final few folds.
  10. This will be a wet batter but if you feel it is too loose, fold in another tablespoon or two of flour. This may be the case if you use quite large bananas.
  11. Drop by heaping tablespoons onto a parchment paper lined cookie sheet, about 2 1/2 inches apart.
  12. Bake for 13-14 minutes until they are brown around the edges and the centres are set.
  13. Cool on a wire rack and store in an airtight container when completely cooled.
