Many long time followers of Rock Recipes, especially those who own my cookbooks, will recognize this recipe right away. It first appeared as an original recipe available only in my second cookbook, Rock Recipes 2, published back in 2015.

Over the last 5 years, have received so many compliments on this recipe from many people who have tried it from that cookbook. So, I have finally decided to add it online for everyone to try for themselves. 

Use the best quality cocoa powder you can find for this recipe.

I’m not one who is much for “secret recipes” anyway. Practically every recipe I’ve ever written appears on this blog, (now over 1700!) with the exception of those developed exclusively as new, unseen recipes to add to my cookbooks.

For the most part, I believe that all recipes are meant to be shared, period. I’ve commented before about a guest restaurant owner on Martha Stewart’s show years ago, who refused to give away part of the recipe he was preparing on air.

“I don’t plan on ever sharing it. ” he exclaimed. 

Well, said Ms. Stewart, in inimitable Martha style, “I’ve gotten where I am by sharing EVERYTHING!” More than 20 years on, that quote still stays with me. I think her approach is exactly right.

I recently read a comment in an online cooking forum, from a person commenting on an old family recipe. “I’ve never shared the recipe”, she wrote, “and it will probably go with me to my grave.”

I immediately bristled at the comment upon reading  it. “What in the world is the point of that?”, I thought. To me, that is mean spirited and dare I say, downright greedy.

I will never understand why some people seem to revel in denying others something they enjoy. Let’s just say, those people and I will never be friends.

But I digress. I will say only that you can expect to see more of those “exclusive” cookbook recipes in the months ahead. All in the spirit of sharing what has made Rock Recipes such a success. You folks deserve no less.

I like to use 50% dark chocolate chips for the ganache but you can use semisweet as well.

White Chocolate Chips should be a good quality brand. Beware of cheap imitations.

Triple Chocolate Truffle Cake. Did I get the name right?

In reviewing this recipe to publish online, it suddenly struck me that I probably did not get the name right when I developed it for the cookbook. The cake really has 3 separate chocolate elements.

The base of the recipe starts with a chocolate scratch cake, then adds a white chocolate filling and a chocolate frosting. Double chocolate suddenly didn’t cut it as a description. Surely Triple Chocolate Truffle Cake was a better description.

So, for the purpose of clarity, the name has changed in the online version. The actual recipe has not.

This decadent cake would be the perfect centrepiece of any celebration dinner. A gorgeous chocolate cake always impresses, but this one is something else.

Just wait for the oohs & ahhs when you cut into this cake to reveal the layers of velvety smooth white chocolate truffle filling inside. It’s definitely one to keep in mind to treat your favourite chocoholic on their next birthday, or any celebratory occasion.

Ingredients

For the chocolate scratch cake batter

Toggle ingredient group

• 2 cups sugar
• 2 cups all purpose flour
• ¾ cup cocoa
• 2 tsp. baking powder
• 1 tsp baking soda
• ½ tsp salt
• 2 eggs
• 1 cup soured milk
• 1 cup black coffee
• ½ cup vegetable oil
• 1 tsp vanilla extract

For the White Chocolate Truffle Filling

• 2 cups whipping cream
• 2 cups white chocolate chips
• 1 tsp vanilla extract
• 2 rounded tbsp icing sugar, powdered sugar

For the Chocolate Truffle Frosting

Toggle ingredient group

• 2 cups dark chocolate chips
• 2 cups whipping cream
• 1 tsp vanilla extract
• 2 rounded tbsp icing sugar, powdered sugar

Instructions

To prepare the chocolate scratch cake

1. Combine all the ingredients for the cake batter in a mixing bowl and beat with electric mixer for 2 minutes.
2. Pour into 2 greased and floured 9 inch cake pans.
3. Bake at 350 degrees F for 30-35 minutes or until toothpick inserted in the center comes out clean. Cool in pans for 5 minutes before turning out onto a wire rack to cool completely.
4. When completely cooled, use a large serrated bread knife to cut the two cake layers into four.

To prepare the white chocolate filing

1. In a double boiler, melt the white chocolate chips together with 1/3 cup of the whipping cream. Stir constantly as you melt the chocolate and don't let it overheat. As soon as the last of the chocolate melts, take it immediately off the heat and let it cool down to lukewarm.
2. Whip the remaining 1 2/3 cups cream with the icing sugar and vanilla to firm peaks and fold in the melted white chocolate by hand.
3. Next prepare the chocolate truffle frosting in exactly the same way as the white chocolate filling.

To assemble the cake

1. Use a piping bag or a Ziploc bag with the corner snipped off to pipe a ½ inch wide line of chocolate truffle frosting around the perimeter of the first layer of cake. This step is important for each layer because it will keep the filling from spilling out as you assemble the cake.
2. Fill the center of the ring with ⅓ of the white chocolate truffle filling and place another layer of cake on top. Continue for the next two layers, then place the final layer of cake on top.
3. Frost the sides and top of the cake with the chocolate truffle frosting. Garnish with grated chocolate or chocolate curls if you like.
4. Chill the cake very well for several hours or overnight before serving.
