Serves 4
Wash and dry 6 medium red or yellow potatoes. Chop into 1 inch cubes and place in a large bowl.
Add
2 cloves minced garlic
2 tbsp chopped oregano
1 tbsp chopped parsley
1 tbsp chopped basil
2 tbsp chopped chives
1 tsp cracked black pepper
1/2 tsp kosher salt
4 tbsp olive oil
Toss all together and turn onto a baking sheet. Bake at 375 degrees F for about 30 minutes or until potatoes are browned and fork tender. Toss the potatoes half way through the cooking time.
