Cinnamon Roasted Butternut Squash
1 butternut squash
2 tablespoons extra virgin olive oil
Salt and pepper to season
Peel and seed a medium sized butternut squash. Cut in cubes and toss in a baking dish with olive oil salt and pepper. Cover and roast in a 350 degree oven for 20 minutes. Toss the squash, uncover and roast for about another 20 minutes.
Mash the roasted squash along with:
2-3 tablespoons brown sugar
1 teaspoon ground cinnamon
½ tsp freshly grated nutmeg
Serve.
