Serves 4
4-6 medium sized red potatoes
1 egg white, slightly beaten
Thoroughly wash and dry potatoes and cut into french fries. Toss the potato pieces with the egg whites until the potatoes are evenly coated with the egg white.
For the seasoning combine:
2 cups flour
1 ½ tsp salt
1 ½ tsp ground black pepper
1 tablespoon chilli powder
1 tablespoon onion powder
1 tablespoon garlic powder
1 tsp ground sage
Toss the potato pieces in the egg white one final time before tossing them in the seasoning mix. You can use a large bowl or a large Ziploc bag for this purpose. Remove the excess seasoning mixture by sieving the potatoes and seasoning through a colander. Save the remaining seasoning mix in a plastic bag in the freezer for the next time you make this recipe.
Place the seasoned french fries in a single layer on a lightly oiled baking sheet. A silicone baking sheet is particularly helpful to use on the baking pan if you have one. I use a spray bottle filled with olive oil for this purpose. I then lightly spray the tops of the french fries as well before popping the tray into a preheated 400 degree F oven. Bake for 25-30 minutes , turning the fries a couple of times during the cooking time.
