Oatmeal Lemon Herb Chicken

Here's one way to get the kids to eat their oatmeal. This crunchy oven baked chicken uses little or no additional oil. With Crispy Oven Wedge Fries (http://rockrecipes.blogspot.com/search?q=fries ) this is a great family friendly meal that can be prepared in just over an hour. This recipe also works well without the lemon marinade if you prefer.
1 whole chicken, cut in 8-9 pieces
zest and juice of one lemon
½ teaspoon salt
½ teaspoon pepper
Marinate the chicken pieces in the lemon juice, zest, salt and pepper in a large Ziploc bag for about a half hour.
2 cups oatmeal
½ teaspoon ground sage
½ teaspoon ground thyme
1 teaspoon oregano
1 teaspoon dry mustard
½ teaspoon freshly grated nutmeg
1 teaspoon salt
1 teaspoon black pepper
Process the coating ingredients in a food processor for about 30 seconds. Dip the chicken pieces in an egg wash of 2 eggs whisked together with 4 tablespoon water. Coat the chicken pieces by dipping them in the oatmeal crumb mixture and place them on a lightly oiled baking sheet. Spray the tops of the chicken pieces with a little olive oil if you like and bake at 375 degrees F for 50-60 minutes depending upon the size of your chicken pieces.
