Parmesan Herb Popovers

2 eggs

½ cup milk
½ cup water
1 cup flour
¼ tsp salt
1 tbsp vegetable oil
4 tbsp grated Parmesan cheese
1 tsp dried oregano

Mix together eggs, milk, water, salt and flour with an electric mixer for about a minute. Add the oil and beat for an additional minute. Fold in the cheese and oregano.

Ladle the batter into 6 well greased muffin cups or ramekins. Sprinkle tops with a little extra oregano. Bake at 425 degrees F for about 20 minutes. Reduce heat to 350 degrees F and bake for an additional 20-25 minutes.

For plain popovers simply omit the cheese and herbs. Substitute the oregano for any other herb you choose that compliments your main dish. Goes well with roast beef and pork.

Fill the inside with scrambled eggs, ham and cheese and even add Hollandaise Sauce on top for a great brunch idea.

Oops. Made a little mistake there.Thanks for the catch. I've corrected it now. It's 1 tablespoon of vegetable oil.

This sounds wonderful, but I'm not seeing a measurement for the oil.
