Roasted Garlic and Parmesan Crostini

These very simple crostini are delicious on ther own but we most often serve them with a favorite dip like spinach or artichoke. A simple toppinfg of fresh tomato and basil is also very good.

1 whole head of garlic
1 tablespoon olive oil
Salt and pepper to season

Place the garlic bulb on a sheet of aluminum foil. Sprinkle with the oil, salt and pepper.
Gather the aluminum foil up around the garlic and twist to seal the foil packet. Bake for 35 minutes at 350 degrees F. Remove the roasted garlic cloves from their skins and mash to a paste with a fork, adding a little salt pepper and a drizzle of olive oil.

Thinly spread the roasted garlic paste over lightly toasted and thinly sliced crusty bread pieces that have been brushed with extra virgin olive oil. Top with freshly grated parmesan cheese and place under the broiler for a minute to melt the cheese. Top with cracked black pepper or some chopped Italian parsley.
