These simple brushetta are always popular at gatherings at our house. The simple salsa recipe is quite versatile and some suggested variations are listed below. The fresh salsa along with tortilla chips is a big party pleaser as well.
Easy Lime Salsa
3 large fresh tomatoes, diced
1 medium red onion diced
1 small jalapeño pepper minced
2 cloves garlic minced
½ red pepper diced
½ green pepper
Juice of one lime
Zest of one lime finely chopped
½ tsp ground cumin
½ cup fresh chopped cilantro
Salt and pepper to season
Combine all ingredients, tossing together well. Cover in a glass bowl and store in the refrigerator. Make at least an hour in advance of serving, stirring occasionally.
This is a good basic recipe that you can add other things to if you prefer. I have often added roasted corn, roasted peppers, chopped avocado and even pineapple.
Lime Salsa and Cheddar Bruschetta: simply brush thin slices of your favourite crusty bread with extra virgin olive oil and lightly toast them under the broiler. French, Italian, focaccia, or ciabatta breads all work well. Top the toasts with salsa and grated cheddar and return the tray to the broiler to melt the cheese. Serve with a small dollop of sour cream if desired.
