Double Chocolate Halloween Monster Cookies

Can you believe it’s already the end of October? Time is flying by. I remember this time of year as a kid when school was in full swing and there was only one thing any of us could talk about: Halloween.

I have fond memories of Halloween in St. John’s – with so many of my friends from school in the neighbourhood, it was essential to prepare a strategy together.

Who to go with, when to leave, and planning our route which mapped out the houses that gave out full-size candy bars. And of course, how to adjust our perfectly planned costumes to accommodate winter jackets if it ended up snowing… which several years it did.

Then came the good part: the candy. I have always been partial to chocolate and peanut butter. My brother was a candy guy, and didn’t like peanut butter at all.

It was an excellent trading arrangement that we took seriously.

Halloween for adults.

Now that we’re grown up, I still love to indulge in Halloween nostalgia on chilly fall walks, by watching scary movies and dressing up for parties with friends in Toronto. Treats, of course, are essential for all these endeavors.

These Double Chocolate Halloween Monster Cookies are an homage to my favourite halloween candy, and a nod to the absurd amounts of sugar I used to be able to eat.

They are perfectly chewy double chocolate chip cookies with crispy edges, kicked up a notch by adding M&Ms (or any other favourite chocolate candies you like!) and then stuffed with a peanut butter cup for good measure.

I’ve also included two super easy decorating options which are fun to try with kids. Try out the half-dipped white chocolate version with sprinkles, or try the drizzling method to make Mummy cookies!

Double Chocolate Halloween Monster Cookies

Double Chocolate Halloween Monster Cookies. Spooky, delicious fun for kids of all ages. Decorating tips included!

Ingredients

  • 1 cup flour
  • ¾ cup good quality cocoa (red cocoa or dutch processed are both great)
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 cup dark brown sugar
  • ½ cup white sugar
  • ¾ cup butter
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chips
  • 1 cup mini M&Ms, or another favourite chocolate candy (candy optional - add some extra chocolate chips if you want to skip the dancy
  • 12 peanut butter cups
  • YOU WILL ALSO NEED
  • 1 cup good quality white chocolate chips
  • 2 tbsp of cream or milk
  • Orange or halloween sprinkles for decorating
  • Eyeball sprinkles (available at most bulk stores or decorating supply stores)

Instructions

To make the cookies

  1. Sift the flour, cocoa, baking powder, baking soda and salt in a bowl and set aside. 
  2. Using a stand mixer or an electric hand mixer, cream the brown and white sugars with the butter until fluffy, about 3-4 minutes. 
  3. Add egg and vanilla to the butter mixture, mix until well combined. 
  4. Add the dry ingredients into the wet mixture and stir in by hand until just combined. Do not over mix - just until you no longer see any streaks of flour.
  5. Add your chocolate chips and candy here. Distribute evenly throughout the dough, without overmixing. 
  6. Chill the dough for at least 30 minutes. This allows the butter to firm up and the flour to hydrate, leading to a better textured cookie!
  7. Divide the dough into 12 equal portions and press into rough balls. I never roll cookies into perfect circles - they always look better a little more rustic to me. 
  8. Break each dough ball in half and press a peanut butter cup in the middle. Put the two sides of the cookie back together and seal shut. 
  9. Chill the prepared cookies for another 15 minutes before baking.
  10. Bake at 350F for about 15 minutes, depending on your oven. For best results, use an aluminum making sheet with parchment paper. 

To decorate the cookies:

  1. Melt the white chocolate with a splash of cream on the stove using low heat. You can do so using a double boiler, or by placing the chocolate in a heat-safe bowl, and resting it on top of a pot with an inch or two of water inside. 
  1. Option one: Half dipped. With the cookies cooled off, drip half a cookie in the white chocolate mixture, then place it on a cool, parchment lined sheet pan. Sprinkle with halloween sprinkles or more candy while the chocolate is still wet, then let it firm up.
  1. Option two: Mummy cookies! Carefully transfer the melted white chocolate into a piping bag with a flat tip, or into a ziploc bag then cut the corner. Drizzle back and forth across the cookies to create the look of bandages, then finish by adding two eyeball sprinkles onto each cookie.
