Whoa! It sure has been a busy summer around here already. This may just have been the busiest 6 weeks of the past few years.

It all started with a 3 week vacation in June. As many of you will remember, our daughter Olivia has been studying at the University of Leeds for the past six months.

Her time there was coming to a close. Our son Noah was also off for the summer from studying at Memorial University here in St John’s.

After a couple of years of fleeting trips, mostly long weekends, we finally got the opportunity to have a proper family vacation together. We were not going to waste that chance either!

We started off by meeting Olivia in London for a several days of theatre, sightseeing and great food. It was then off to Rome for a few days for more sightseeing there and of course more great food.

After Rome we embarked on a 7 day Western Mediterranean cruise, stopping at another 2 cities in Italy as well as Cannes, Barcelona and Majorca. We had several stellar meals during those stops, including a Michelin starred lunch in Cannes and the best tapas ever in Barcelona!

Were we finished? Nope. To finish up our European adventure we headed finally to Dublin for several days of pub hopping and sightseeing.

It really was a whirlwind, but it was great to spend all that time together as a family. We get along surprisingly well together, even in close quarters. 🙂

Finally back home.

We all came home, unbattered but tired. I need to learn to slow down on vacations.

I tend to cram as much as possible into vacation days. As I get older, I think my travels should be slower, to take in more of the vibe of the places I visit.

Italy and Spain have taught me that and are calling me back soon but I expect they will be slower, more relaxing visits.

Within a week of returning home, we celebrated my sister’s wedding, which was a blast. We still have several family members home from Alberta and Ontario. Of course, we have been entertaining them too. It really has been a whirlwind summer so far.

On returning home I was pleased to hear that a planned reprint of Rock Recipes 2 was back from the printers. I was very pleased that it is once again available for sale on Amazon Canada. Local bookstores should have it now too.

In celebration, I am releasing one of the recipes from Rock Recipes 2 that has not appeared online before. It is the spice version on of our incredibly popular Velvet Cake Collection.

With all our other flavours already online, I thought the time was right to add this one. Top it off with some of our brown butter frosting for one of the best homemade cakes you will ever bake; especially if you are a spice cake fan like me!

Spice Velvet Cake

Spice Velvet Cake. The soft moist texture of a premium brand cake mix in a delicious, fragrantly but lightly spiced cake topped with brown butter frosting!

Ingredients

  • 1¼ cups all purpose flour, sifted
  • 1½ cups cake flour, sifted
  • ½ teaspoon baking soda
  • 1½ tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp allspice
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 teaspoon salt
  • 1½ cups sugar
  • ⅔ cup vegetable oil
  • ⅓ cup vegetable shortening, at room temperature
  • 2 tsp vanilla extract
  • 3 eggs, large or extra large
  • 1½ cups buttermilk

For the Brown Butter Frosting

  • 1 cup butter, browned
  • 4 cups icing sugar, powdered sugar
  • 2 tsp vanilla extract
  • 3 tbsp milk, approximately

Instructions

  1. Sift together both flours, baking soda, baking powder, salt, sugar, cinnamon, ginger, allspice, nutmeg and cloves. Set aside.
  2. Grease and flour 2 nine inch round cake pans and line the bottom with 2 circles of parchment paper.
  3. In the bowl of an electric mixer beat together the vegetable oil, shortening and vanilla. Beat well at high speed with whisk attachment until light and fluffy
  4. Beat the eggs in one at a time.
  5. Fold in the dry ingredients alternately with the buttermilk.
  6. I always add dry ingredients in three divisions and liquid ingredients in 2 divisions. It is very important to begin and end the additions with the dry ingredients. Do not over mix the batter. As soon as it has no lumps in the batter, pour into the two prepared 9 inch cake pans.
  7. Bake at 325 degrees F for 30-35 minutes or until a wooden toothpick inserted in the center comes out clean. Allow the cake to cool in the pans for 10 minutes before turning out onto wire racks to cool completely.

To prepare the Brown Butter Frosting

  1. To brown butter just melt it in a small saucepan over medium heat and watch it carefully until the color turns light golden brown. Watch it carefully; it can burn quickly once it reaches the proper color.
  2. Pour it off immediately into a heat proof measuring cup, leaving the sediment behind. Allow the brown butter to cool to room temperature and solidify.
  3. Beat all ingredients together until smooth, fluffy, and a spreadable consistency. Use a couple of tablespoons of milk to begin and add more if need be or of it becomes too thin, just add a couple more tablespoons of icing sugar at a time to get to the proper consistency.

We made this cake yesterday and it is wonderful. It reminds me of Barry's Spanish Cake which has been made several times in our home. I am sharing it with elderly neighbours who asked me about making a spice cake or squares for them. They all enjoy Barry's recipes. My "better half" always goes to my e-mail and lets me know what is in store for the palate today's supper or dessert of the day. Cooking and baking is the no. 1 hobby for me in the winter and gardening in summer with the BBQ at the ready. Love all the recipes and have Barry's books too.

I took a vacation similar to yours last year. I loved all the sights, sounds and tastes, but there is no place like home!! I have to make this cake. I's make a great spice cake over any other flavor. Thanks for sharing.
