Strawberry Cointreau Cream Cheese Stuffed French Toast

Orange liqueur infused cream cheese and fresh strawberries stuffed inside thick cut slices of french Toast. An indulgently delicious brunch idea.

Ingredients

  • 4 ounces cream cheese
  • 2 tbsp honey
  • 3 tbsp Cointreau, or other orange liqueur
  • 3/4 cup chopped strawberries
  • 4 slices of good crusty bread, (Belgian, French, Italian...) twice as thick as a regular slice.
  • 2 eggs
  • 2 tbsp heavy cream
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ½ tsp vanilla extract

Instructions

  1. Blend together the cream cheese honey and Cointreau until smooth. Fold in the strawberries.
  2. Cut a pocket into each slice on one side of the crust, leaving the other sides intact. Carefully spread ¼ of the cream cheese mixture into the pocket of each slice.
  3. Whisk together the eggs, cream, salt, cinnamon and vanilla.
  4. Dip the stuffed bread in egg mixture and fry over medium heat in 3 tbsp butter until golden brown on both sides. Serve with powdered sugar, maple syrup or both!

Another winner, Barry.

I used "whipped" cream cheese and I think that made the stuffing too runny. Next time I'll use the regular brick of cheese.

Wonderful breakfast none the less.
