Caramel Apple Waffles
These Caramel Apple Waffles are a Fall brunch classic at our house but I have to admit we often serve this as dessert with ice cream to delighted guests.
We have a guest chef appearance this morning with her take on caramel apple waffles.
Spouse is a cracker-jack on the old waffles and had this plate in front of me before the bottom of my first cup of coffee this morning. I don’t normally eat first thing in the morning but I didn’t want to offend. 😉 I knew I kept her around for a reason. Not a bad brunch before the Downtown Santa Claus Parade; looks like a great day for it on a sunny morning here in St. John’s.
Caramel Apple Waffles
These Caramel Apple Waffles are a Fall brunch classic at our house but I have to admit that this waffle version has often served as dessert with ice cream at our house. Trust me on this one, people are surprised and delighted to be served waffles for dessert.
Ingredients
For the Caramel Sauce
- 1 ¼ cups brown sugar
- 1/3 cup water
- 4 tbsp butter
- ½ cup whipping cream
- 1 tsp vanilla extract
For the Sautéed Cinnamon Apples
- 3 large apples, peeled, cored and cut in wedges
- 2 tbsp butter
- 2 tbsp brown sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
For the Cinnamon Waffles1 egg
- 1 cup milk
- 3 tbsp canola oil
- 1 tsp vanilla extract
- 1 ¼ cups flour
- 1 tbsp sugar
- 2 tsp baking powder
- ½ tsp salt
- 1 tsp cinnamon
Instructions
For the Caramel Sauce
Boil together the brown sugar and water over medium heat for 5 minutes.
Add the butter and continue boiling until mixture reaches 250 degrees on a candy thermometer.
Remove from heat and add the whipping cream and vanilla extract. Be very careful this mixture will boil rapidly and steam when the cream is added.Leftover sauce can be stored for a couple of weeks in an airtight container in the refrigerator. Great over ice cream.
For the Sautéed Cinnamon Apples
Melt butter in a large sauté pan. Add apples, brown sugar, cinnamon and nutmeg and sauté for about 5 minutes until the apples are fork tender but not mushy.
For the Cinnamon Waffles
Sift together dry ingredients.
Beat eggs add milk, oil and vanilla extract.
Add to dry ingredients and whisk together until smooth.
Use about ¼ cup batter per waffle, depending upon the size of your waffle maker.
Cook until golden brown. Makes about 8 waffles.
