Chorizo Hash Browns with Spicy French Toast. A deliciously different brunch idea that’s a little on the spicy side but full of fresh flavours too.
This delicious version of hash browns is as equally at home at the breakfast table as it is as a side dish at dinner. I particularly like them for brunch like shown here.
The Spicy French Toast is a reminder that the dish can be served on the savoury side as well as sweet. Here I’ve simply added hot sauce but fresh herb and even grated cheese could be added to the egg mixture.
For the spicy french toast, I just add as much hot sauce as I like to the egg mixture before dipping the slices of baguette in it. Serve with your favorite salsa and a garnish of sour cream and chopped cilantro.

Chorizo Hash Browns with Spicy French Toast
Chorizo Hash Browns with Spicy French Toast. A deliciously different brunch idea that's a little on the spicy side but full of fresh flavours too.
Ingredients
For the Chorizo hash browns
- 4 red potatoes, washed and diced
- ¼ cup butter
- ½ pound chorizo sausage, chopped in small pieces
- 1 red onion, diced
- 1 roasted red pepper
- Salt and pepper to season
For the Spicy French Toast
- 8 slices of day old french bread (diagonally sliced baguette as pictured also works well.)
- 4 eggs
- 1/3 cup whipping cream or milk
- pinch salt
- 2 tbsp hot sauce (more or less to taste
Instructions
To prepare the hash browns
In a large heavy bottomed skillet, melt butter and begin to brown the potatoes.
When the potatoes are about half way cooked throw in the chorizo sausage and onions.
Season with salt and pepper. Continue to stir fry until the potatoes are fully cooked.
In the last couple of minutes of cooking time throw in the roasted red pepper.
Serve with the spicy French toast and top with salsa, guacamole or sour cream.
To prepare the spicy French toast
Whisk together the eggs, cream, salt and hot sauce.
Let the bread soak in this mixture for a few minutes to absorb as much as possible.
Fry in butter over medium-low high heat until golden brown. You don't want to fry these too quickly.

This looks fantastic. Where do you get your chorizo in St. John's? The only kind I can ever find is the smoked/cured, dry kind from Dominion, is that what you use here? I have seen uncooked chorizo sausage, but only while working at restaurants (which they got from wholesalers). Any ideas where I might find it?
